Quick and Dirty Chicken Stock

Ingredients
- ☐1Whole chicken (picked clean)
- ☐1Yellow onion
- ☐1Celery stalk
- ☐1Carrot
- ☐1 tbspRosemary
- ☐3-4Bay leaves
Equipment needed
- ☐~InstaPot
- Place mostly picked-clean whole chicken into InstaPot.
- Cover with cold water.
- Add salt and pepper (“Real Salt” works well here).
- Cut the celery and carrot into large pieces, add into pot.
- Dice the onion, add into pot.
- Add Rosemary, Bay Leaves into pot.
- Set InstaPot to Soup/Broth, cook for 25 min.
- Drain the broth into a bowl to save.
- Discard the rest of the solids.
