Ingredients to buy
- ☐2xDiane's Meat Sauce
- ☐1 boxManicotti tubes (10-12)
- ☐16 ozRicotta cheese
- ☐16 ozMozzarella cheese, grated
Ingredients you probably have
- ☐Parmesan cheese, grated (4 tbsp)
- ☐Eggs (2)
- ☐Parsley, dried (2 tbsp)
Equipment needed
- ☐12 inNon-stick skillet
- ☐4.8 qtPyrex casserole dish
- ☐SmallStainless steel mixing bowl
- ☐~Large pot
- ☐~Wax paper
- ☐~Pastry bag / ziploc bag
- ☐~Electric hand mixer
- Start by making two portions of Diane’s Meat Sauce.
- Boil the manicotti shells while the meat sauce is simmering.
- In the mixing bowl, combine:
- Ricotta
- Mozzarrella
- Parmesan
- Eggs
- Parsley
- Drain shells and place on wax paper.
- Heat oven to 350.
- Fill pastry bag with cheese mix, then fill the shells with cheese.
- Grease the casserole dish.
- Layer the casserole dish with:
- Meat sauce
- Filled manicotti shells
- Meat sauce to cover the shells
- Mozzarella cheese
- Put the casserole dish into the oven with a baking tray under to catch spills.
- Bake for 30 min until casserole is bubbling.
